What is Baladi Meat?
Baladi meat comes from locally raised cattle in Egypt. It has a stronger, richer flavor than imported meat because the animals are naturally fed and free-range.
Essential Meat Cuts
1. Fillet (Tenderloin)
The most tender cut. Almost no fat, cooks quickly. Perfect for fast grilling over charcoals. At العم مشمش, fillet is grilled solo or included in the mixed grill.
2. Entrecôte (Rib Eye)
A cut rich in internal fat (marbling) — that's what gives it amazing flavor. Grilled over charcoals, it comes out incredibly tender. One of the most premium cuts.

4. Baladi Kofta

5. Kebab

6. Baladi Sausage
Casings stuffed with spiced minced meat. Grilled and served with tahini. One of the most delicious baladi specialties.
7. Tarb
Minced meat wrapped in mandeel (thin fat membrane). When grilled, it melts and gives the meat a unique rich flavor.
